These questions have been bothering me for years…
Who invented kare-kare? What made him mix ox tail and peanut butter? Why did he call it kare-kare? What does it mean? And why do we add bagoong?

regarding your thought on May 1… “kare-kare” comes from the Indian/Bumbay words “curry-curry” meaning a thick paste usually of peanuts. Indians have long been trading with Filipinos even b4 Spaniards came. Such words as “sari-sari” also came from Indians. Bagoong has always been used as a dipping sauce by Filipinos because it doesn’t easily spoil and it is easy to store. The oxtail is one of the most tender parts of the cow, very expensive, very much prized as a delicacy. Any part of the cow can actually be used for kare kare but since oxtail is such a small part of the body, it is more sought after. Just like the tongue of beef.
